Is there a way to put Xs through notes? I once did it but I forgot the shortcut. Can you please tell me this shortcut again? Thanks!

I don't think there is a shortcut for this.

Not in normal notation. In tablature there is Shift+X for ghost notes.
Highlight the notes. Open the inspector. Go to "note" then "head group" and from the drop down menu select what you want.
