What do track colors do? I can change them with the mixer...

They change the color of the track in as clearly seen in the bottom half of your screenshot in the mixer.
Some (usually more DAW-oriented users) like to give similar instruments or all instruments of one group a similar shade of the same color. Just to make locating the tracks a bit easier when you have many.
