Default directory
How can I stop MuseScore creating a folder in 'My Documents' every time I open it, please? I found this previous post: https://musescore.org/en/node/292617
but I had already done that and it didn't work.
I don't like software that won't let me decide where to put folders!

Simple: you can't.
You can set up MuseScore to store your scores elsewhere though

Wait till you discover operating systems... jk
To be clear: you can create folders anywhere you like, and you can put your scores anywhere you like, and you can even configure MuseScore to use your custom location by default. But you can't prevent it from creating the folders it wants to create in addition to the folders you want to create. In that respect it's pretty much exactly like most other software I know.

How do you change the default locations to your own custom locations? Can I do this both for saving scores and for exporting PDFs?

MuseScore remembers the last-used folders for open and for save. So no need to do anything special to change anything. Just save a file to a given folder, then the next time you save a file, it will default to the same location. Export defaults to the same folder as the file itself.
