How do I choose a playback instrument for chord names? (Can I?)

I'm using 3.6.2 on a Linux box, and I notice when I use Ctrl-K C7 (or any chord) it plays back with piano. (Or, at least that's what I think I hear.)

Is there a way to tell it to use some other instrument for all the chords entered?
