How do you show all the notes in a chord when the chord symbol is selected? I did it once accidentally.

You can create your own shortcut in Edit > Preferences > Shortcuts
or...
use Tools > Realize Chord Symbols

On pretty much any mouse with a single physical button, Ctrl+click works as right click. Or, on touchpads, two-finger tap. Some keyboards also have a "menu" menu to perform this function. But every system, is different; you'd have to consult the manual for your hardware/OS is none of those suggestions work.
As mentioned, there is also Realize Chord Symbols in the Tools menu. but lots of other functionality is accessed via right click (in MuseScore and other programs), so best to get comfortable with how it works on your system.
