typing and changing notes...
This is a living nightmare! Why can't I just type along with my notes same as if were typing English or Spanish or any other language? I've already told it we're in E major, so it should know the scale. It randomly puts #s by some of the notes that are auto-sharp in E major... but not always. When I want to change the tune or make a correction, it moves onto the next measure and messes up the part of the composition I was happy with... And so forth and so on... and I honestly could hand scribe this transcript in pencil faster than trying to appease this software. I'm at a loss as to what to do. I'm just a hobby composer trying to finish my second composition requested by my 94 year old dad before he dies. The software I used for my first composition was very simple... Almost just like a typewriter. But they discontinued the software. Can anyone recommend another software that is user friendly for an amateur, and cheap???

If you follow basic note entry rules as per https://musescore.org/en/handbook/3/note-input#keyboard then yes, you can just type in the English note names and MuseScore will be key signature aware for them.

Same situation applies here. There are millions of corrections successfully performed by MuseScore users each day and it is difficult to know your specific issue. Sometimes it's because a note is added to a measure and the note has a duration which "splashes over " into the next measure - for example, like adding a whole note to a 4/4 measure and placing it on the last beat. It's difficult for us to guess without looking at your particular situation and seeing the score.
As mentioned, you actually can just type letter names, and it automatically obeys the key. And changes to one measure should never affect any other measure. So it's not clear what you are doing differently from the norm, but you might want to check out this tutorial, which covers all the basics:
