Crescendo's not playing
This has happened suddenly while working on an transcription where crescendo's that i insert don't do anything. All other cresc and dims that were inserted before just now work fine but they have now stopped working. Is there a way to fix this?

What version MuseScore? Your score sounds fine in MuseScore 3.6.2.
You can verify velocity changes using the piano roll editor (PRE).

The bottom of the piano roll editor contains the Levels Display Area. It is a bar graph showing extra data values assigned to each note, such as its absolute velocity which is selectable from the drop-down list.
You can see here that bars 186 - 188 do play the crescendo:

It looks like it was just the version I was using. I haven't updated it since I downloaded musescore (I would've had the version from this time last year). I have updated and it is working.

3.6.2 was also the released version from this time last year..

I originally downloaded it from the microsoft store so maybe it was a different version on there from the one on musescore.org

@jm6stringer: Inspired by this, (I've not used the piano roll editor before), I created a simple score to experiment... I see discrete-note velocity changes, but I guess the PRE doesn't (or can't) show velocity changes on a sustained note. Which is fine, I'm just new to the PRE's representation.

It doesn't show them because SND by default uses CC2 and not velocity to change the volume.
