For MuseScore 3 I made an extensive post "Part name" about the names of parts and instruments and what you need to change.
It only discusses the actual name. If you want to change the sounding instrument, including valid ranges, clef etc you need to do more things. In this case you might consider creating a new instrument/part and copy-paste the contents of the old part.
