You can select and edit any number of consecutive measures whether they are on one system or many. However, you can't select, for example, the second measure on each system. The measures must be consecutive. It's much like a text editor where you can select many consecutive words but not the second word on each line.

It is possible, for example, to (Ctrl) select notes from measures in different systems and change their color:

For example, in a score I want to select the 5th bar in system 7 and the 2nd bar in system 12 and the 10th bar in system 17 together and then edit them together at the same time (e.g. delete all legato slurs there).

All those measures are disconnected. You would have to Ctrl click on each of the legato slurs to make a 'list" selection. Then press delete to get rid of them.
(Similar to my second example in the picture above.)

Yes, I was aware of that. But what if I want to transpose, say, 10 different measures scattered throughout the score? Then I have to do this specifically for each individual bar. But it would be faster if I could briefly click on all the bars concerned and then transpose them all together, right?

Your examples are not addressing the issue. Those measures are on different instruments but within a single system, not multiple systems.
From the handbook glossary:
"System
Set of staves to be read simultaneously in a score."
The OP wants to select measures that are not read (or played) simultaneously. And that can't be done in Musescore. You can only have one range selection at any time and selecting a whole measure is necessarily a range selection.
