How to change instrument in the second part? (with first part left as it is)
Like file 1, when I click on the note of the second part and insert the change instrument text, it automatically changes to the first part like the file 2.

You can't have different instruments on one stave and have them playback as different instruments; 1 stave = 1 type of instrument. For example you can't have flute and oboe on the same stave. You can have two flutes or two oboes.
If that is what you need (but I don't recommend it) you should copy one instrument part to its own stave and then hide that stave while disabling playback of that instrument on the "visual" stave.

I just had this problem when making scores for the percussion section of an orchestral score.

Aah, percussion! If you are dealing with untuned percussion that is different. I am not a percussion expert but I understand that you would probably want to set up a custom drumset.
I suggest you start by reading this section of the handbook https://musescore.org/en/handbook/4/idiomatic-notation-percussion. If that doesn't help, come back and explain in more detail what you are trying to do.

For example, I tried to change the instrument in the second part of the triangle staff when I had to play the triangle and the cymbals at the same time.
