Nightly builds are downloaded via the Downloads link in the menu at right of this page. The crash that your appears to be a duplicate of was fixed 9/17. But even though you might not have downloaded the Beta 1 build until 9/23, the build itself is from around 8/25.
I opened your score in a recent build and had no problems adding an instrument. You are almost certainly seeing that (already fixed) bug that caused crashes adding instruments if multimeasure rests were enabled.

When pressing OK Musescore crashes.
My goal: I have a part for Oboe I and one for Oboe II,
want to make one score with both.
This is 2.0 beta 1. As mentioned above, this most probably is a duplicate and fixed in recent nightly builds, reopen if not.
Well, checking for updates does not give any update.
Do nightly builds not apear in the "check for update"-screen?
Or better question: How to get the nightly build???

Found the nightly build, and yes: this problem is fixed.
One point: the crash occured in Beta1 also when multi-measure rest was turned off.
