MuseScore3 transpoing intruments

The default seems to be putting all instruments in concert, rather than written pitch. I want to write the score in written pitch, as I know how they will sound when played. I cannot find the toggle to enable inputting notes as written for the instrument.

No, the default setting in MuS 3 is the written pitch. However, it may be possible to change the default setting - I haven't found it yet. But: if you save a score in concert pitch, it will be reopened as such the next time.

In MuS3 there is a button "Concert Pitch" in the toolbar, only when this is pressed can the concert pitch be seen.
A simple test: create a new score e.g. in C maj, use flute (C), alto saxophone (Eb), horn (F) and trumpet (Bb) as instruments. Each instrument has a different key signature in written pitch: Flute shows C maj, alto sax A maj, horn G maj and trumpet D maj. And of course they all show the same key signature when the concert pitch button is pressed.
If you don't see this button, check View -> Toolbars if it is activated.

I can't compose, but I imagine it's much easier to do it in concert pitch mode, because then you can see directly, for example, how the chords are formed with the individual instruments.
