Change of Sound in Mixer does not affect whole staff
Adapting a score found at MuseScore.com. Changed vocal lines staves from "Choir Aahs" to various instrument sounds, but (Soprano 1 and Tenor 1) change to "Choir Aahs" at m. 28, despite Mixer showing them as Flute and Bassoon, respectively. What to do?

Soprano and Tenor in that score seem to have 3 channels, all called 'normal'. Check that right pointing arror in them in the mixer.
You only changed the 1st channels' sound

To get rid of it I've added one, right clicked it, select all similar, Del
