Is there a way to have the breath mark cut into the length of the note rather than pause the whole playback?

Version 3 allows for controlling playback via piano roll editor: https://musescore.org/en/handbook/3/piano-roll-editor#Opening, so you can for instance shorten the duration of a note and it will reflect upon playback and MIDI export.
You might not have those abilities with the new and improved MuseScore 4. As a workaround, you could try setting the breath mark's pause time to 0.0s and then hide a staccato mark to shorten its playback.

Breath mark is set to 0 by default in MU4. For my own education, please post a case where this would be needed.

I've no opinion on the matter, fortunately enough, save that it seems contingent upon one's interpretation of breath marks - like how a fermata can be interpreted as if instructing to ritardando slightly prior to getting to the fermata's position.
Not directly. You would have to change the duration of the note and, maybe, its appearance.
