Play keyboard and have MuseScore write the music.
I already play keyboard, and read music. Would like to play and have MuseScore write what I play.
Also want to convert my old had writen music and convert it to digital with MuseScore.
How do I proceed?

Honestly? Use another program to record the notes as score and import the xml-file into MuseScore to fine tune it.

For "Would like to play and have MuseScore write what I play", Pentatonus is exactly correct!
However, for "want to convert my old had writen music and convert it to digital with MuseScore", yes, MuS is the right tool. Open the application, click to open a New score, complete both screens of the New score dialog, and then enter your music.
For new users, I always recommend a quick read-through of the Handbook: https://musescore.org/en/handbook/4. Don't bother trying to memorize it! Just skim through it sufficiently to have a rough idea what information exists in the Handbook.
