How to add staff to score?

I am transcribing Piatti's 7th caprice for solo cello for viola. In all copies of the cello part I've seen, the ending is on two staves. How do I add a staff for only that part in order to adjust for the rapid changes from register to register? For reference, I've attached a screenshot of the cello part.
