The language I have on my account is English but for some reason it's Polish in the app and I have no way to change it in the app.

In the English interface you can change the UI language with Edit > Preferences > General > Languages
In the Polish interface you can change the UI language with Edycja > Ustawienia > Ogolne > Jezyki
You need to restart MuseScore for the change to take effect.
