Time Signatures:
I request that you add 7/8 as an available time signature to your next version,
Music from the Caucuses (Laz region), Turkey and Macedonia use a 7/8 rhythm called 'Laz' and South-Western Greece, the region around the port of Kalamata, use a 7/8 rhythm known as 'Kalamatieno'
There is also the Indian 7/8 rhythm known as 'Dawr Hindi' and a Persian 7/8 rhythm known as 'Nawakht'

7/8 is already supported. You can create a 7/8 or just about any time signature you can think of by going to the main time signatures palette - press "T" in MuseScore 1.3, or "Shift+T" in 2.0 builds.

Shift+T was broken for some period of time in 2.0 builds - might have included beta 1, I don't recall. But it's working for me now with today's build, on Ubuntu, and has been for a couple of months at least I believe.
EDIT: yes, it was broken in beta 2, but is working now
In any case, shortcut or not, you can get there with View / Master Palette then clicking Time Signatures.

Just came looking for this to help transcribe the drums for Flathead by The Fratellis. Is there a way to get custom time signatures to display in the left pane palettes or do I have to open the full palette in a separate window each time?

Niiice, I probably only use 10 different things out of the various palettes, time to make a custom palette full of shortcuts. Cheers.

Hi, yes I used "Shift+t" and it worked but when I hit "add" to add 7/8 to my time signature it didn't add. I've restarted the system, did it again and nothing has changed. On top of that Musescore will not play my music.

Before you hit add, you need to set up the time signature including the beaming you want. I don't see how pressing "add" to soon would make MuseScore stop playing music.
You should start a new thread about MuseScore not playing. Include your Operating System and version of MuseScore.

"Add" doesn't add it to any particular measure in your score, just to the Master Palette itself. You still then need to add it to your score normally, as for any other time signature.
Ad for not playback, try Help / Revert to Factory Settings. If that doesn't help try a search of this forum for previous discussions. There are a few other people having playback issues, some of which turn out to be incompatibilities with other programs on the computer, and workarounds have been discovered for some of those cases.
If after a search you don't find anything that seems relevant, you can start a new thread to ask about it. Be sure to say what version on MuseScore and what OS.

I'm not sure if it's been fixed but everytime I try to paste in 7/8 for a time signature change it crashes

Please post the specific score you are having problems with and precise step by step instructions to reproduce the problem.

I use MuseScore 2.0.0 with Lubuntu and I can create an score with 7/8 from the scratch, without any problem.
Also, I can insert (from the Master Palette, not from the Left Menu of Palettes) any other time signature, in any part of the scores.

I can easily create the 7/8 time signature when the breakdown is 3-2-2, but I don't seem to be able to find a way of making it 2-2-3 (which is also used in Balkan music). Similarly, I can't see a way of creating the Balkan 9/8 with the breakdown of 2-2-2-3. Are these possible in MuseScore 2.0?

Yes. See the Handbook under "Time signature" for info on how to set the default beaming for any particular time signature.
