Disabling auto complete and breaking two linked notes
Is there a way to disable auto completing notes (to complete period value) and breaking two notes which linked another in a period?

Not totally sure what you mean about "auto complete". If you mean, the fact that entering a notes automatically adjusts the next note to ensure a measure is always complete, then no. But your second question makes me think you are not talking that but about beaming. If so, then in 2.0, you can set the default beaming behavior for a time signature by right clicking and using Time Signature Properties. You can also break existing beams using the Beam Properties palette.
