I was wondering if there was a way to make it so that a line of instrument (such as percussion) is only shown for one line of the score and have it not show anywhere else

Yes, just add the staff, add the notes, then go to Style / Genera/ and turn on the Hide Empty Staves option. The staff will disappear from the systems in which that staff is empty.
