Different Pedal?
Just wondering how I could start with the "Ped" symbol, have no line after it, and end with the "release pedal (*)" symbol.

Take a 'normal' Ped. line (from the Lines Palette in the Advanced Workspace, switch the line to invisible in Inspector, disable the hook and add a * text for end in line properties

That's not really what I meant - when I put "*" I really meant an actual musical symbol that LOOKS like it (see attached image).

Press Z and choose the symbol from the palette;
Drag on the score;
You can save it in the custom palette

You can use this same symbol in the line itself. Right click the line, Line Properties, change the end text to look the same as the begin except for "Up".
This has come up enough times that I have submitted a feature request and a proposed implementation to include in the (advanced) palette by default. See #67516: Add traditional Ped / * line to Advanced palette.
Here's one I tried earlier. Select Custom Palettes and load this file. There is a version with Pal----------* and one with Pal * (line invisible). You still might have to tweak it a bit horizontally.
