Roto Toms + Tenor Drums
I was in the process of creating a marching band arrangement when I inserted a note into the Tenor Drum staff from the Marching Percussion selection. When I played it back, it was set default as a grand piano. Instead, I chose The Low Roto Toms, thinking it would solve the problem. Instead, the default playback instrument for THAT instrument was Melodic Toms. It sounded way too electric and annoying. Please bring back the old Low Roto Toms sound.

In order to use the Marching Percussion instruments, you need to load a soundfont that contains those sounds. I guess maybe you had loaded one in a previous version, you just need to do the same in the current version.
Or, you can use the standard percussion instruments instead of the marching percussion - these will work with the default soundfont. But I wouldn't recommend using a roto tom as a substitute for a tenor drum - they are usually tuned to too precise a pitch Instead, the regular tom toms would be a better choice.
Also you can choose any soundfont you like, and use different soundsfonts for different isntruments. See the Handbook under Soundfont

Feel free! As mentioned, you just need to be sure to use a soundfont that supports these sounds. See the Handbook under Soundfonts for more info on how to do that.
