Newbie ques Parts vs Voices vs Intruments to create midi and score
Wanting some beginners advice regarding choral score.
I'm writing out some parts for 4 singers (mainly SATB) so that I can produce
a) a score for all 4 singers, Grand Staff style, with S A on treble clef and T B on Bass clef
b) create midi teach tracks for each singer, by changing the instrument for each (say Soprano line in loud Harmonica and other parts in soft Piano - repeat for each part).
Very new user (downloaded yesterday) and need to get something done quickish, but not quite finding my way around Instruments/Staffs/Voices/Parts.
I'm coming to the conclusion that writing each part as separate Instrument is the only way to achieve my midi files, Is this correct?
But in that case, I can't find a simple solution to create a song sheet for everyone.

Yes it is, see also #42306: Option to use a different instrument for each voice and #13584: Playback should be able to select voices, not just instruments.
So you'd need a full 4 staff SATB score, a closed score S+A,T+B won't do

So if I need a 4 staff SATB to produce the midi teach-tracks, is there any way to easily way to create a Grand Staff (with or without separate MS2 Voices) with the S-A on treble and T-B on bass.

There is an easy way to do this. First create the file with 4 separate staffs (to get separate playback) and add all the notes and lyrics. Then save another copy of the same file, and in the new copy change the Tenor staff to Bass cleff. Now:
1. Select all of the Soprano and Alto music (click in the top left bar, press Shift+End, then hold Shift and click in the final Alto bar).
2. Go to Edit -> Tools -> Implode.
3. Do the same for the Tenor and Basses.
4. Remove the empty Alto and Bass staves (Edit -> Instruments).

That might end up with the parts in the same "voice". If you want different voices for each part (you probably do!) then follow these instructions instead: https://musescore.org/en/node/12345
