Move Selected Notes to Different Instrument
I would like to move all the selected elements from one instrument to a different instrument. If I only select one note at a time, I can do this using copy and paste. How can I move ALL selected notes to a different instrument?

Same as one note at a time - copy and paste. To select multiple notes, you do it the same basic basic way as most other programs - eg, click one note, shift+click another to select everything between. or, click a note, shift plus navigation keys (including cursor keys, tab, ctrl+home/end etc) to select as you navigate. Or, shift+drag to select a rectangular region.

This only works for me if I only select and copy one note. If I select and copy more than one note, pasting does nothing!

You tried selecting using the specific method I described? Those definitely do work. But it does not work to ctrl+click individual notes - that creates a discontiguous list selection, and those cannot be copied. You need a *range* selection, which is what the methods I described create.
If you are still having problems, please post the specific score you are having problems with and precise step by step instructions to reproduce the problem so we can understand better what is going on.

Explode is interesting, but I want to be able to move the selected notes. Sometimes I will want to move the bottom or middle notes. Is there any way to move selected notes like this?

Explode moves *all* the notes. So just do the explode, then delete what you don't want.
