Open the menu Format->Settings choose Page and adjust the Grand Staff Distance

I don't see Grand Staff Distance. I did use --- Format => Page Settings => Page Size: Staff space: 0.016 in.
This works, except the size of the staff becomes very small.
I moved the Page Margins right side to 7 inches (which did move the right margin), but the staff size is still small.

How do I enlarge the staff size?

Grand Staff Distance is on Format > Style... > Page

0.016 in indeed is very small, the default is 0.069 in
