Voice replacement
I have recently uploaded two music sheets for which the base calls for violoncellos. After uploading my music sheets to Musescore, the violoncellos have been replaced by a piano voice which is quite inappropriate and unwanted.

You are mistaken, but see https://musescore.org/en/faq#faq-308797
The chord symbols to playback as of MuseScore 3.5 (which is what the musescore.com backend uses meanwhile) and are way louder than your violoncello.
Unfortunately musescore.com does this even to pre-3.5 scores (like this from 3.4.2), this will get fixed with 3.5.1.
Meanwhile your only chance it to update to 3.5.0 and follow the steps in the above FAQ to disable chord symbol playback

In other words, if I remove the chord symbols (Am, E#, etc...) means that I will no longer hear a piano chord being played?

Yep. But if you're using MuseScore 3.5.0 it should also work as mentioned in the FAQ if you select a chord symbol, untick "play" and set it as style by selecting the "S" inside the inpector. With the latter there should be no need to remove them.

Thanks Kuwitt, would you be so kind as to be a little more thorough with your answer: how and where do you "untick" this play function and where would you select the 'S' in the inspector? There are several choices but none of them about setting to 'Style'. Thanks again for your response! :-)

It is in 3.5.0, in the chord symbols inspector. Not in 3.4.2...

Jojo, one thing I should say however, I did publish the score "Can't help falling in love" with the chords written above the bars and I don't hear a piano chord kicking in which is how I intended this score to be listened to. Here is the score I published.

When I play this in version 3.5 I hear all of the chords played on the piano by default.

Not in MuseScore 3.4.2, indeed, but you will in 3.5.0.
