If you continue to have trouble, then as mentioned, please attach your score so we can understand and assist better. But it does work when done correctly - and in particular, if the instrument you added to your score is one like violin that actually supports this.
How did you create this score? The staff says it is for viola, but it is indeed missing the pizzicato channel. Was it maybe imported from MIDI or MusicXML or some other format? That won't always set everything up correctly. But, just right-click the staff, Staff/Part Properties, Change Instrument, and re-select Viola.

I did try it on a score. The dropdown menu didn't show the options to chose from.

You didn't add the right instrument. All violins and other strings have an arco, pizz and tremolo option.

What do you mean? The piece just has viola and im adding a piano part to it.
