What problems were found with Catalina? I'm using it now, and I can't get my tremolos or repeats to work.
Do I have to wait until Big Sur is ready for prime time?
You saw the problem with repeats. Catalina had some permission problems that were fixed shortly after it was released. As for the tremolo you'll need to attach a score showing the problem.
You just did. As far as the MuseScore desktop program, its handbook, support and this website here is concerned, the forum is the way. The only way.
As there's nothing sold here, there's not really a company vs. customer relartionship...
Anyway: yes, MuseScore 3.5 as well as 3.6 have been reported to work well on Big Sur
Other than that: when in doubt, try it out. Nothing to loose, as it is free.

Probably.. There is currently no reason that it wouldn't work.

We'll find out soon enough. Nobody expected Catalina to be a problem, but it was (albeit minor).

The repeats problem is not Catalina specific, but a general 3.5.0 regression, see #308698: Continuous view stops repeats from working in playback, the permissions and notarization ones are Catalina specific though. Tremolo issue are so far unheard of, but let's continue on that in https://musescore.org/en/node/310522

Has anyone tried it with the MacOS 11 Beta?
