When i delete notes from the staff, it breaks the time signature so i'm not able to fix it in time. (ie despite being in 3/4 time when i delete a note it only gives me space for 2 quarternotes).

Write a score in 3/4 time. Delete the last note (Ctrl+delete) inside of the bar. Then try to add in a note to replace it (there's no longer a rest/space there to fix it).

How do you delete it, using Ctrl+Del? If so: don't, use just Del
This is not a bug. It's exactly what Ctrl+Delete is designed to do - remove the actual selected range from the music. So with one beat selected, one beat is removed from the measure, exactly as you asked. If you merely wanted to remove the note (leaving a rest), then simply use Delete, not Ctrl+Delete.

Thanks for your response, that does make sense. If i had found it on the support forum i would've used it, however I ask that you understand that it is not always easy to find things via the forum.
