There are several musical fonts to choose from, Emmmentaler being the default, but there's also Bravura, Goneville and MuseJazz. See Format > Style > Score
You can't, however, change just the clef style
There are different music fonts for different scores for the same reason there are different text fonts for different scores, different staff sizes and spacing for different scores, etc - because users chose the style setting that suited their desire. MuseScore provides six different fonts for music notation, so you'll see six different clef styles floating around. But as mentioned, you don't change clefs individually, you pick a music font and it applies to all symbols.
