There isn't a predefined shortcut for sharp, but you can define your own in Preferences>Shortcuts. I use # (and - and = for flat and natural respectively)..
The up arrow will sometimes add a sharp, but not always. So in the key of F if you have a Bb, pressing up arrow will give you a B nat and on pressing a second time a C nat.

Thanks for this Steve; I’m sorry, I should’ve been more specific. I’m trying to put chord symbols on a lead sheet, and I felt sure I’d seen somewhere on this site that there was a shortcut.

For a sharp sign in a chord symbols just use the regular #, for a flat the b

When writing chord symbols you should use "#" (shift-3 on my Swedish keyboard). Do not use the sharp-symbol, it will not work as you hope. The "#" will be rendered as a sharp (♯) in the chord symbol when you are done.
