MuseScore is a notation program, not a DAW, so it isn't about recording. You enter notes one at a time the way you want them to appear on the printed page, picking the duration and spelling of each note as you go, same as you would with paper and pencil but it will look a lot better, and also play back. You can use the digital piano for the entry if you like, though - just keep in mind, it's still one note at a time. See this tutorial for more info on how note input works:

It's also worth noting that "MusicXML" is an industry-standard way of supporting "scores," and several DAW programs do support import/export in this format. I must say, however, that "the promise may be much more than the delivery."
