Crescendo/diminuendo
Is it possible in MuseScore to adjust the volume of the notes so that they change in line with where you have put crescendo/diminuendo?

It depends how you have put crescendo or diminuendo. If you add them from the Lines pallet and if you have a dynamic somewhere before and after the line then they should work. Also note that for a crescendo to work over a single note, the instrument must be able to support that - a piano can't do that for example.
The lines work in exactly the same way as the equivalent "hairpins" which are described here https://musescore.org/en/handbook/3/hairpins. That article also mentions the cresc. and dim. lines.

Also note that if you want to change the text to read "crescendo" in full rather than the default "cresc." for example, you can do that in the inspector. The inspector also allows you to change or suppress the display of the default dashed line.
