I only see options for SATB...how to make for just SA?

Which version of MuseScore?
Just delete the TB
There's no template for SA+Piano
I think it's 3 (3.6.2...etc)
So, I tried that....selected just the tenor staff and deleted....it deleted the entire page.

Go to the Edit Instruments dialogue and remove the staves (aka instruments) you don't want.
You probably deleted measures rather than staves
