These setings are well hidden in the Advance settings section for a reason...

Tick Edit > Preferences > Advanced > smoothPan/enabled
Provided you're using MuseScore 3 (as shown in that youtube video). In MuseScore 4 that isn't available

You have to edit these numbers shown in my screenshot. We can't know, which suits for you because we don't know you computer system.
BTW: "this guy" is the second best guy you can get here!

At present there seems to be a big difference between Continuous View playback between MS3 and MS4.
The difference which I see in Continuous View at present is this:
MS 3.6.2
- playback cursor is positioned more or less centre-screen (as you want)
- wide number of smoothPan settings options in Edit > Preferences > Advanced
MS4.0.2
- playback cursor moves left to right on a static screen even in Continuous View, which prevents look-ahead
towards the end of its travel
- there are no smoothPan settings available in Edit > Preferences > Advanced
So if you are trying to follow MS3 instructions while using MS4 software, you will indeed be very confused. For now (MS 4.0.2) the static cursor option is not available. The missing feature has been reported in Github, but doesn't seem to be coming back in MS4 any time soon:

We got that, but as I told you already, that had obviously been done with Mu2 (and possible with some development version), not with Mu4
