Dynamics
Hi, everyone!
For some reason, I'm having difficulty with dynamics in my pieces.
-what is the default dynamic for instruments? I ask because after I add a crescendo, mf, f, p, pp, I can't seem to get the instrument(s) back to the same level as before the dynamic was added. Thanks for your help!

I believe (NOT sure of this!) that the default dynamic is either mf or mp.
Best thing to do is be explicit. Mark the beginning with the dynamic you want. Mark the end of the crescendo line or hairpin with the dynamic you want it to end with. And so with the diminuendo line or hairpin. If you want the explicit dynamic markings to not be visible, mark them so. But include them.

I'm afraid this is not correct (although it should be!). The default dynamic sits somewhere between mp and mf. See attached image showing Muse Sounds Strings waveform for default, mf and mp dynamics.

Ah! Nothing like consistency then! As far as I'm aware, it's like my pic for all instruments in 4.x

I have tested 6 other instruments and they all behave the same - in 3.7.
It may be different in 4.x ...

You won't be able to. The default dynamic sits somewhere between mf and mp and there's no way to get back to it that I've ever found. It's a major irritation as often mp is too quiet and mf too loud.
