"Cmd+Shift+#" shortcut for entering "sharp" symbol does not work on macOS
https://musescore.org/en/handbook/4/entering-and-editing-text says that "Cmd+Shift+#" is supposed to insert the sharp character.
However, on macOS, Cmd-Shift-# (Cmd-Shift-3) has always been a system hot key for taking screenshots – https://support.apple.com/en-us/102646. So, MuseScore doesn't insert anything, as that shortcut is taken over by the system, and every time you press that key combination, you just get a new screenshot.
Does it mean it that it actually never worked on macOS at all? Or am I missing something, and something else is supposed to be used, and it's just an incorrect instruction in the docs?

Yes, but the documentation for that shortcut also states "May not work on some keyboard layouts".

... and you may be right in suggesting that it's not a good choice for ant MuseScore shortcut on MacOS!
On my laptop (Windows 10), the shortcut for Add accidental: sharp is undefined. You can set this shortcut to a suitable key combination on your Mac with Edit > Preferences > Shortcuts > (search for Sharp).
I thought the key combination for sharp was Ctrl+Shift+= (aka Ctrl+ +).

The default accidental shortcuts are:
Flat : -
Sharp : +
Natural : =

Just in case, this is about entering accidentals in text fields, not entering them for notes on the staff. So, those shortcuts that you mentioned are not applicable here.
