updating key signature
When I set my score up I forgot to add the key signature e-flat major. So I go to the pallets and select Key Signatures, select the first measure of the score and then press the e-flat major symbol in the pallets toolbar adding the key signature however now all the notes have a natural symbols next to them. I tried selecting all the measures and adding the key signature but got the same results.
How do I add the key signature so all my notes end up being flats instead of naturals?

This is a key misunderstanding that new users often run into. Since you forgot to enter the key signature, you did not enter any E-flats (unless, at some point, you explicitly entered an E-flat, with the flat sign). When you change the key signature, this does not change any notes. The E-naturals you entered (however much you believed you were entering E-flats) remain E-naturals. Entering the key signature repeatedly doesn't help: it still doesn't change any notes.
So, how to change those notes? Find an E-natural and click it. This selects that one E-natural. Right-click it and from the context menu, click on Select / More.... Then on the dialog, check Same Note Name: E. This will select all E-naturals, in all voices, on all staves. Press the Down arrow, once. Now all those E-naturals are E-flats.
Tnen, repeat that sequence with the B-naturals and the A-naturals.
However, the best way to "change" this is to not need to change it at all. That is, set the key signature before you begin. :-) Simply get in the habit of doing this as soon as you begin a piece.

Actually, I have been using MuseScore for quite awhile now and I simply forgot to add my key signature. For me the simplest solution was to re-enter the notes since there were not that many measures to deal with. Thank you for the help.

If you have no additional accidentals in your score you can select all and press twice the 'flat' or 'sharp' and the 'natural' sign.

But it doesn't work if you have accidentals in front of your notes, e.g. Ab for a Bb major, because that also becomes A!
