How do I delete a note or rest? I am having so much trouble and I haven't figured out how!

To delete a note, simply click it and press delete. That deletes the note and replaces it with a rest so that no other notes are affected at all - they remain exactly where you put them. Rests you would not normally delete, because that would leave a "hole" in the measure.
It could be you are thinking of deleting a note or rest because you actually want to move some unspecified number of subsequent notes earlier. To do that, simply do so directly - use cut and paste to tell MuseScore exactly how many notes you want moved and where you want them moved to. no need to waste time first deleting what was there before.

I was actually trying to remove a rest, but can you move or transform rests?

Nevermind, I found out that you could replace rests with notes.

Exactly. My answer above applies to both notes and rests. Assuming your goal in deleting the rest was to move some unspecified number of subsequent notes earlier, simply do that directly via cut and paste - no need to waste time first trying deleting the rest. Just replace it with the notes you want.
