Sustain pedal problem in general
Before writing a part I practice to figure out how to write what I have in mind and I often use the sustain pedal. I press on the sustain pedal but it doesn't sustain the notes at all it just does it like if it was nothing.
Take note I use a midi controller so the sustain pedal is by default a midi CC33.
I've already used Finale and Finale does it right by default. But Finale doesn't good VST to play the parts compared to Musescore and musescore seems to play articulation much more well too, so I'm probably moving to Musescore slowly.

I do not know how you use sustain pedal. (and other details about cable connections and setup)
but, Notice: MIDI Sustain pedal CC number is 64. (CC64)
CC33 is Modulation Wheel.

I saw the CC33 behind my USB keyboard it's an M-audio oxygen 61.
I guess now I actually understand one of the reasons why this does't seem to work now should normaly be a midi CC64.
It sounds like you mean you are trying to use MuseScore's built-in sounds to hear yourself practicing? It's not really intended for that and indeed doesn't work well for that purpose. Better to use your keyboard's own sounds when practicing, or another program whose primary purpose is real-time performance, then use Musecore just for the notation.
