8th note triplet run
I wasn't sure what category to put this under but I am trying to do a slurred triplet run in all 8th notes and whenever I add a second triplet bar the application turns the 8th note triplets into 16th note triplets, how can I solve this?

that gives me an octuplet, and when I try the custom it leaves out a half beat

What is the score's time signature?
Is it perhaps a capacity problem?

I realized that it was an issue of not resetting my selected note length. (the triplets being in 8th kept 8th notes selected so i created an 8th triplet in 16ths)

A common mistake, it's kind a of quirk in how we do triplet input that you need to keep resetting.
Another option is to first enter all the quarter rests you need, then exit note input mode, select the rests, and hit Ctrl+3 to turn them all into triplets at once.
