Switch Instrument But Keep Notes
So I'm writing an orchestral piece and the default for the strings is one (1) of that instrument playing; i.e two solo violins, one solo viola, one solo cello and one solo contrabass. I didn't relize this until fifteen pages in! How can I change the instrument keeping the same notes? I know you can do the Palettes-Instrument Text-Change Instrument thing, but why would I say at the beginning of the score if it will be more than one of that instrument through the whole thing?

To change instrument for a staff, right click the staff, Staff Properties, Change Instrument. There is indeed an instrument "violins" you can change to, but you'll need to change to "All" instead of "Common" in the dropdown at the top of the instrument dialog. Or you could simply use View / Mixer to change the playback sound to strings, which is mostly what changing the instrument would get you anyhow.

But changing the mixer would not change others who might play it back with a different sound font than you have.
