noteheads
I use musescore 3.4 . I can't change the noteheads . I just want the crossed notehead, but none of the conventional ways work. I have tried selecting a note and then double-clicking on the head I want but it won't attach. Any ideas?

Inspector F8 , Note section, Head group = cross , is that you want ?

I can see the Head group drop down menu but I can't select it it won't respond ?

That's true. Edit your notes into normal mode, then select all notes and clic on cross symbol into head group
Any chance you're writing for a percussion instrument now?
Then changing the notehead can be done using the

For TAB staff I suppose? So, you achieve this with shortcut: Shift + X

W/hen I highlight a note and want it to change it to a rest it doesn't work. Instead the note just disappears
but there is no rest. I followed the instructions in the manual but are missing something. Any ideas??

I am writing some stuff for the electric guitar and can't find the Symbols for the 'up' and 'down' pick symbol
Does anyone know where they are or possibly design them ?

Usually you can use the symbols Up bow/Down bow in Articulations palette.
