I can't add plugins to the appimage either, is there no way?

Just put them where the AppImage is looking for them (See Edit > Preferences > General

And it should be the usual location by default: ~/MuseScore3/Plugins. I am using the AppImage and use plugins all the time. be sure to read the Handbook to learn more about how to download and install them. You mention adding them to the AppImage, but that's not really literally how it works, you don't add them to the AppImage, you simply download them to your plugins folder and enable them within Plugins / Plugin Manager. The AppImage itself is not modified in any way.
