Way I put in a score manually
This is the way I put in original pieces and transcriptions manually according to type of song and # of instruments
Solo:
1) do everything before the sheet music like choosing key signature, time signature, tempo, and instrument
2)put in notes, repeats, and voltas as well as change in time signature and/or tempo and/or key signature
3) Put in dynamics, diminuendos, crescendos, as well as accents, tenutos, and fermatas, staccatos, and portatos(or mezzo staccatos as they are also called)
Duet and everything above that that isn't a concerto or has piano in it(unless it is a piano duet, piano trio, piano quartet, or piano quintet(by this I mean 2 * maximum number of pianos for the number of hands)):
1) same as solo
2) same as solo but top instrument first and going down
3) same as solo but top instrument first and going down
This one here includes original symphonies(by that I mean no transcription of the symphony) as well as transcriptions that don't have piano in it.
Sonatas that are not piano sonatas, other songs with piano that are not multiple pianos for the whole song:
1) same as solo
2) same as solo but piano first than top instrument and going down
3) same as solo but piano first than top instrument and going down
Concertos(piano concertos are covered in the one above that includes sonatas that aren't piano sonatas)
1) same as solo
2) same as previous except solo instrument first and than rest of the orchestra
3) same as previous except solo instrument first and than rest of the orchestra
For every symphony, concerto, quartet, quintet, sextet, septet, octet, trio, and duet it takes me longer to do the original than it does for me to do the transcriptions of it.
For example I am working on Symphony no. 40 by Mozart(I am saying by Mozart because I bet other composers had their 40th symphony in g minor and Mozart's is the most famous). I am working on the original one. This will take longer than any of the other transcriptions.
The transcription of Symphony no. 40 by Mozart that will take the next longest amount of time is 2 pianos 8 hands(a type of piano quartet).
The trio of Violin, Cello, and Piano will take a shorter amount of time than the quartet.
The 2 duets of 2 pianos and 2 horns will take a shorter amount of time than the trio
The one that will take the shortest of all is the piano solo.
I at least predict this because I have noticed more instruments = longer time to finish piece whether it is a sonata, symphony, or concerto, or some other piece.

I have noticed a pattern when putting in notes manually for a piece because I want it at the right speed. Solos I tend to complete like Piano Sonatas for instance, Duets I tend to do slower and sometimes stop for a while(which might be months) doing a solo or another piece. Similar things happen when I do symphonies but much more frequently, even if it is a relatively short symphony like Symphony no. 1 in Eb K 6.
