I would like to create a slightly larger space in between the wind and percussion parts in a piece. How could I do this?

Assuming you mean you want the larger space consistently throughout the piece, easiest way is to Shift+drag the top staff of the percussion downwards. Or right click the staff, go to Staff Properties, and increase the "Extra distance".

If you want it to be temporary and only have extra space on a certain page, go to Master Pallet -> Breaks and Spacers and select an option of spacers. This is really helpful when you have those times where parts overlap because of notation.
