How do I change multiple rests?
I would like all of the rests in the score to be displayed as eighths.
Is it possible to set the default rest duration for the file, or to select all the rests and change them their duration?

Why? Are you looking at something as https://musescore.org/en/handbook/tools#fill-with-slashes or https://musescore.org/en/handbook/tools#toggle-rhythmic-slash-notation ?
If you really want all rests to be a series of 8th rests, I believe the only options it to do if manually for one measure then copy/paste it to others
