Why isn't this XML working
I took an xml file (aso-instruments.xml) and added some instruments by pasting the instruments from a score. (I opened it in mscx format with EditX-Pro)

The instruments in score are not having the exact same format as in instruments.xml.
Also your xml has errors:
error on line 940 at column 14: Opening and ending tag mismatch: Instrument line 0 and Part

Where can I learn about instruments.xml so I can make them without the pasting or learn how to edit the paste so it works?

Take existing entries from instruments.xml and modify those. I don't think you'll find Part and Staff tags there for example.

Also have a look at how the score does it, but don't blindly copy/paste stuff across. I for example use that to find the proper range of instruments, letting MuseScore translate an E2 onto the corresponding pitch

I've found that if on an instrument you delete the part under drumset you can paste a .drm file and it works fine.
