How do you go back and change the instruments, copyright, titles etc., if you have already pressed finish, and you are already on the score?

add to the https://musescore.org/en/handbook/score-properties dialog when you open it (File → Score properties…). In "Score Properties" you can also enter other information about the score.

If you mean what's displayed on the score itself, double click the information or select it and press ctrl+e to edit it.
