Your question is way too generic to receive a good answer, which is probably why there isn't one yet.
I don't think there's much difference (if any) between the templates you've listed. If the hymn uses the Grand staff to combine multiple singing voices, I'd probably start from the SATB closed template.
But other than also ending up with a grand staff, again it doesn't really matter that much.
Probably neither, but any of the Choral templates
